Sponge Cake Meringue

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the custard

  1. Preheat the oven to 350°F (175°C).

  2. Butter a pudding dish and cover the bottom with slices of stale sponge cake, fitting them closely together.

  3. In a bowl, beat the yolks of three eggs with three teaspoons of sugar. Add the grated rind and juice of the orange, juice of the lemon, and melted butter. Mix well.

  4. Dissolve soda in 1½ cups of milk and stir into the egg mixture.

  5. Pour three‑quarters of this mixture over the cake.

Bake and make the meringue

  1. Place the dish in a pan of boiling water in the oven.

  2. Bake until the cake absorbs the custard and no longer floats, then add the remaining custard.

  3. While baking, make the meringue by beating three egg whites to stiff peaks. Gradually add ¾ cup of sugar, then flavor with the grated rind and orange extract.

  4. Spread the meringue quickly over the pudding and bake for 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard and set it, while whites whip into the meringue topping.
Sponge cake
Soaks up the custard so the pudding becomes soft and moist throughout.
Milk
Provides the liquid base of the custard, giving it a soft, creamy body.
Granulated sugar
Sweetens the custard and, dissolved into whites, stabilizes the meringue.
Melted butter
Adds richness and fat, giving the custard a smoother, softer texture.

The step that matters

Spread the meringue quickly over the pudding and bake for 15 minutes.. Whipped meringue deflates as it waits, so it should go on the pudding promptly. Sugar added gradually keeps the foam stable while it bakes to a set, lightly browned topping.

Swap the orange

How well each one fits the dish's main ingredients (butter, egg, sugar, lemon, milk):

  1. Vanillafits better
  2. Figfits about as well
  3. Peachfits about as well
  4. Orangethe original

Fit is the average pairing score against butter, egg, sugar, lemon, milk. Candidates are from the same food group and used in at least 100 recipes.
