Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bananas
Their pulp provides the body and banana flavour of the sauce.
Granulated sugar
Adds sweetness and helps give the sauce a smooth, syrupy body.
Butter
Adds richness and a smooth mouthfeel to the sauce.
Flour
Thickens the sauce when rubbed with butter and stirred into the hot liquid.
Lemon
Adds acidity and brightness that balances the sweetness of the banana.

The step that matters

Adding the butter and flour mixture. Flour thickens only when it is hydrated and heated, so stirring in a little hot liquid first helps the mixture blend smoothly without lumps before it returns to the saucepan.

Swap the banana

How well each one fits the dish's main ingredients (sugar, butter, flour, lemon):

  1. Raisinfits better
