Codfish Gravy

Ingredients

Directions

  1. Soak the codfish in cold water for several hours or wash thoroughly and pick fine.

  2. Place the codfish in a pot with cold water and boil for a few minutes.

  3. Pour off the water, add fresh water, and boil again if the fish is not very salty.

  4. Drain the codfish again and add plenty of sweet milk and a little cream if possible.

  5. Add a good-sized piece of butter and a thickening made from flour or cornstarch mixed with cold milk until smooth.

  6. Just before removing from heat, stir briskly.
