What each ingredient does

Beets
Form the main body of the salad and carry the dressing's flavour and colour.
Vinegar
Adds acidity that sharpens the sweetness of the beets and balances the oil.
Oil
Adds fat that softens the sharp acidity and carries flavour across the dressing.
Sugar
Adds sweetness that rounds out the acidity of the vinegar and mustard.

The step that matters

Dressing the beets while they are still warm. Warm beets are more porous, so they absorb the dressing better than cold ones. Adding the dressing while the beets are still warm lets them take up more flavour. Emulsifying the oil into the vinegar mixture before pouring also keeps the dressing from separating on the beets.

Swap the mustard

How well each one fits the dish's main ingredients (vinegar, sugar, pepper):

  1. Capsicumfits better
  2. Mustardthe original
  3. Cabbagefits less well
  4. Cucumberfits less well

Fit is the average pairing score against vinegar, sugar, pepper. Candidates are from the same food group and used in at least 100 recipes.
