Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Become tender and sweeter as they cook, forming the body of the dish.
Milk
Provides moisture and creaminess for the sauce.
Butter
Adds fat for richness and smooth flavour to the sauce.

The step that matters

Thicken the milk and butter mixture. Milk proteins can scorch on the bottom of the pan or curdle if heated too hard or too fast. Heating gently and stirring keeps the sauce smooth as it thickens.

Swap the onion

How well each one fits the dish's main ingredients (milk, butter, pepper):

  1. Potatofits better
  2. Capsicumfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against milk, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
