Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the grated peel, pulp, and juice of the lemon.

  3. In a separate bowl, blend the flour with a little cold water until smooth.

  4. Mix the flour mixture with the lemon mixture and add the sugar and remaining cold water.

Assemble and bake

  1. Pour the filling into one pie crust and cover with the second crust.

  2. Bake until the crust is golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemon
Provides the sharp acidity and aroma that flavour the filling.
Sugar
Adds sweetness and balances the sourness of the lemon.
Flour
Thickens the filling so it sets rather than running out of the pie.

The step that matters

Blending the flour with cold water until smooth. Flour added directly to liquid clumps, and clumps stay lumpy in the filling. Mixing it first with a little cold water separates the starch granules so they disperse evenly and thicken the filling smoothly.
