Bread Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Combine bread crumbs and enough milk to cover them in a double saucepan.

  2. Add lemon peel, nutmeg, and cinnamon, then boil for about 15 minutes.

Finish and bake

  1. Sweeten to taste, remove the cinnamon, and add the eggs. Beat the mixture well together.

  2. Bake at 350°F (175°C) for 30 minutes or boil for over an hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Form the body of the pudding, soaking up milk to create a soft, tender structure.
Eggs
Bind the mixture and set during baking to give the pudding its custard-like firmness.
Milk
Soaks the bread crumbs and provides moisture so the pudding stays creamy rather than dry.
Sugar
Adds sweetness to balance the eggs, milk and spices.

The step that matters

Beating the eggs into the mixture. Eggs must be fully blended so they set evenly during baking. Adding them to a very hot mixture can scramble them, so they should go in once the mixture has cooled slightly.
