Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pastry flour
Forms the structure of the dough that holds each dumpling together while it steams.
Baking powder
Releases gas in the dough so the dumplings rise and turn light and fluffy.
Milk
Moistens the flour so it becomes a stiff dough that can be dropped by spoonfuls.
Jam
Sweetens and flavours the syrup that the dumplings steam in and is served around them.

The step that matters

Cover immediately and steam the dumplings. Trapped steam cooks and lifts the dough. If the lid is left off, heat escapes, the dumplings cook unevenly and may turn dense rather than light.
