The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pastry flour
Forms the structure of the dough that holds each dumpling together while steaming.
Baking powder
Releases gas in the dough so the dumplings rise and turn light and fluffy.
Milk
Hydrates the flour into a stiff dough and adds moisture and richness.
Jam
Sweetens and flavours the syrup that the dumplings steam in.

The step that matters

Cover immediately and steam. Covering the pot right after dropping the dough traps steam so the dumplings cook through and rise. Lifting the lid lets steam escape, which can leave them dense and uneven.
