Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. Beat the egg yolks until thick.

  2. Add the juice and grated rind of the lemon, sugar, flour, and salt; mix thoroughly.

  3. Blend in the milk and melted butter.

  4. Fold in the stiffly beaten egg whites.

Bake

  1. Pour the mixture into a pie plate lined with flaky pastry.

  2. Bake at 400°F (200°C) for about 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the filling and stiffened whites lighten its texture as they set in the oven.
Lemon
Juice and rind provide the acidity and bright aroma that define the pie's flavour.
Sugar
Adds sweetness that balances the lemon's acidity.
Flour
Helps thicken the filling so it sets into a sliceable custard.
Milk
Adds moisture and richness to the custard base.

The step that matters

Fold in the stiffly beaten egg whites. Whites hold air that lightens the filling; overmixing or deflating them makes the pie dense and less airy after baking.
