Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main seafood, cooked gently in their own juice until the edges curl.
Mayonnaise dressing
Adds richness and fat that softens the briny flavor of the oysters.
Lemon juice
Adds acidity that brightens the oysters and balances the richness of the mayonnaise.

The step that matters

Cook oysters in their own juice until the edges curl. Overcooking toughens oyster protein, making the flesh rubbery and shrinking it. Stopping as soon as the edges curl keeps it tender and moist.

Swap the lettuce

How well each one fits the dish's main ingredients (oyster, parsley, celery, lemon):

  1. Carrotfits better
  2. Shallotfits better
  3. Okrafits better
  4. Lettucethe original

Fit is the average pairing score against oyster, parsley, celery, lemon. Candidates are from the same food group and used in at least 100 recipes.
