Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean salt pork
Provides savory flavor and fat that seasons the cooking liquid during the long simmer.
Parsnips
Become tender during simmering and add sweetness and body to the stew.
Flour
Thickens the cooking liquid into a looser gravy when stirred in with cold milk.

The step that matters

Adding the flour mixture. Flour must be mixed smoothly with cold milk before it goes into the hot liquid, otherwise it forms lumps and thickens unevenly.

Swap the parsnip

How well each one fits the dish's main ingredients (pork, flour, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Turnipfits better
  4. Parsnipthe original

Fit is the average pairing score against pork, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
