Oyster Patties
Ingredients
Directions
Prepare the shells
Prepare rich puff pastry and bake it in very small tin pans.
Once cool, turn the pastry shells out onto a large dish.
Make the filling
Stew the oysters with a few cloves until cooked.
Add the grated hard-boiled egg, a little butter, and enough oyster liquid to cover the oysters.
Remove the oysters from the pan and let them cool.
Assemble
When cold, place two or three oysters in each puff pastry shell.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Rich puff pastry
- Forms the crisp, flaky shell that holds the filling.
- Large fresh oysters
- Provide the main savoury filling and their briny flavour.
- 1 hard-boiled egg, grated
- Adds body and richness to the filling.
- Butter
- Adds fat, giving the filling a richer, smoother mouthfeel.
- Oyster liquid
- Moistens the filling and carries the oyster flavour.
The step that matters
Stew the oysters only until cooked. Oysters turn tough and rubbery when overcooked, because their proteins tighten under prolonged heat. Stop as soon as they firm and curl.
Swap the clove
How well each one fits the dish's main ingredients (oyster, egg, butter):
- Capersfits better
- Nutmegfits better
- Parsleyfits better
- Clovethe original
Fit is the average pairing score against oyster, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
