What each ingredient does

Candied fruits
Provide chewy pieces and concentrated fruit flavor throughout the frozen dessert.
Sugar
Sweetens the mixture and lowers its freezing point, keeping the frozen texture softer.
Gelatine
Adds body and helps the frozen mixture hold a smoother, more cohesive texture.
Lemons
Add acidity and bright citrus aroma that balance the sweetness.
Oranges
Add juice and citrus flavor, contributing sweetness and aroma.
Sherry wine
Soaks into the candied fruit, adding aroma and a mellow, fruity flavor.

The step that matters

Strain the mixture. Straining removes rind pieces and solids so the base freezes smooth. Skipping it leaves a gritty texture that is hard to correct later.
