Chocolate Caramels

Ingredients

Directions

Make the caramel

  1. In a saucepan, combine 2½ cups sugar, ¾ cup pure corn syrup, ½ cup butter, ⅛ teaspoon cream of tartar, and 1 cup whole milk.

  2. Stir constantly over heat until the mixture boils.

  3. Gradually add the remaining 1½ cups whole milk without stopping the boil.

  4. Continue stirring and cook until the mixture reaches 248°F (120°C) or forms a hard ball in cold water.

  5. Remove from heat, add 2½ squares chocolate and 1 teaspoon vanilla extract, and mix thoroughly.

Set and cut

  1. Pour into two buttered pans and let cool slightly before cutting into squares.

What each ingredient does

Sugar
Forms the caramel base and provides sweetness and browning as it cooks.
Pure corn syrup
Prevents sugar crystals from forming, keeping the caramel smooth and chewy.
Butter
Adds fat for a soft, rich texture and a buttery flavor.
Whole milk
Adds moisture and milk solids that give the caramel its creamy body and color.
Chocolate
Adds chocolate flavor and richness to the caramel.

The step that matters

Cook to 248°F (120°C). Stopping at the right temperature controls the firmness of the set caramel. Cooking too little leaves it soft and sticky, while cooking too far makes it hard. Stir constantly so the milk solids don't scorch on the bottom of the pan.
