Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Bring 2 quarts of water to a boil.

  2. Add 2 chopped onions, 2 baker's rolls, salt, and pepper.

Cook

  1. Add 1 head of chopped celery and ½ cup of butter.

  2. Boil for 30 minutes.

Brown the rolls

  1. If the rolls are not brown enough, place them in a 400°F (200°C) oven for a few minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Soften and turn sweet and aromatic as they simmer in the broth.
Baker's rolls
Break down and absorb liquid, thickening the soup with body.
Celery
Adds savory, aromatic flavor as it cooks in the broth.
Butter
Adds fat for richness and a smoother mouthfeel.

The step that matters

Browning the rolls in the oven. Browning, a Maillard reaction driven by dry heat, gives toasted, savory flavor and color. Heat that is too high or too long can scorch the rolls and make the soup bitter, so check them within a few minutes.

Swap the onion

How well each one fits the dish's main ingredients (pepper, celery, butter):

  1. Carrotfits better
  2. Capsicumfits better
  3. Mustardfits better
  4. Onionthe original

Fit is the average pairing score against pepper, celery, butter. Candidates are from the same food group and used in at least 100 recipes.
