What each ingredient does

Freshly pickled tongue
Is the main ingredient, and its brine-cured meat is what gets cooked and sliced.

The step that matters

Skinning the tongue immediately after cooling. The skin is easiest to peel while the tongue is still warm and soft. Letting it cool fully after the cold-water bath can make the skin cling and tear, so it should be removed promptly.
