Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main body and briny flavor of the salad.
Celery
Adds crisp texture and fresh, mild crunch against the soft oysters.
Mayonnaise dressing
Adds richness and moisture that binds the salad together.
Vinegar
Adds acidity that brightens the dressing and balances the richness.

The step that matters

Skimming the oysters while they boil. Skimming removes foam and impurities that would cloud the flavor and texture of the oysters. Draining them well keeps the dressing from thinning and the salad from becoming watery.

Swap the lemon

How well each one fits the dish's main ingredients (celery, oyster, vinegar, pepper):

  1. Lemonthe original
  2. Limefits about as well
  3. Cherryfits less well
  4. Plumfits less well

Fit is the average pairing score against celery, oyster, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
