Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mealy potatoes
Starchy flesh that becomes soft and fluffy inside while the outside crisps when fried.
Egg
Binds the batter so it coats the potato slices and holds together in the skillet.
Flour
Thickens the milk and egg into a stiff batter that clings to the fried slices.
Sweet milk
Moistens the batter and helps it brown lightly as it cooks.

The step that matters

Fry until golden brown on both sides. Medium heat lets the slices cook through and brown evenly. Too hot and the outside burns before the centre softens; too cool and the slices absorb fat and turn greasy.

Swap the potato

How well each one fits the dish's main ingredients (milk, egg, flour):

  1. Arrowrootfits better
  2. Asparagusfits about as well
  3. Chivefits about as well
  4. Potatothe original

Fit is the average pairing score against milk, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
