Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Soak the bread crumbs in the milk.

  2. Beat the egg yolks until light and stir them into the milk and bread mixture.

  3. Add the melted butter and then fold in the beaten egg whites.

Bake and serve

  1. Bake in a preheated oven at 350°F (175°C) until golden brown.

  2. Serve with sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard and add structure to the pudding as it bakes.
Milk
Provides the liquid that soaks the bread and makes the custard moist.
Dry bread crumbs
Absorb the milk and egg mixture to form the body of the pudding.
Melted butter
Adds fat for richness and a tender texture.

The step that matters

Folding in the beaten egg whites. Whites hold air that helps the pudding rise and feel light. Folding gently keeps that air in, while stirring hard would deflate it and leave the pudding dense.
