Lady Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and flour.

  3. Add the sugar and mix well.

  4. In a separate bowl, beat the egg yolks until well combined, then add to the mixture.

  5. Sprinkle the chopped raisins with a little flour, then add them along with the chopped almonds, shredded citron, and lemon juice and rind.

  6. Finally, beat the egg whites until stiff peaks form and gently fold them into the batter.
