Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that the starch thickens into a smooth custard.
Corn starch
Thickens the milk as it heats, giving the blanc mange its firm, sliceable body.
Shaved chocolate
Provides the chocolate flavor and color throughout the custard.
Granulated sugar
Sweetens the custard and balances the bitterness of the chocolate.

The step that matters

Wetting the corn starch before adding it to the milk. Starch clumps into lumps if it hits hot liquid dry. Mixing it first with cold or room-temperature milk disperses the granules so they thicken the custard evenly.
