Spanish Cream

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cream

  1. Dissolve the gelatine in ½ pint of milk.

  2. Boil 1½ pints of milk and pour it over the dissolved gelatine.

  3. Beat the yolks of 2 eggs with 1 cup of sugar and flavoring, then add to the gelatine mixture.

  4. Cook for 3 minutes, stirring constantly.

Top and chill

  1. Beat the egg whites until light, then mix in 1 cup of sugar and the juice of 1 lemon.

  2. Spread the egg white mixture over the top of the cream and place in a 400°F (200°C) oven for 2 minutes.

  3. Set the cream on ice to chill.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid cream into a firm, sliceable body as it cools.
Milk
Forms the creamy liquid base that carries the flavour and sets softly.
Egg yolks
Add richness and help thicken the custard base as it cooks.
Egg whites
Whipped into a light foam that gives the topping its airy texture.
Sugar
Adds sweetness and helps stabilise the whipped egg white topping.
Lemon juice
Adds acidity that brightens the sweet, rich flavour of the dish.

The step that matters

Cook for 3 minutes, stirring constantly. Egg yolks can curdle or scramble if overheated. Constant stirring spreads the heat evenly so the custard thickens smoothly without lumps.

  2. Figfits about as well
