Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard and whites whip into the light, airy topping.
Milk
Forms the liquid base of the custard, which sets as it thickens with heat.
Granulated sugar
Sweetens the custard and helps stabilise the yolks as they cook.
Powdered sugar
Sweetens the egg white meringue and dissolves easily into it.

The step that matters

Stir until thickened to the consistency of cream. Egg yolks thicken the milk gently over heat. If the custard gets too hot or is stirred too little, the yolks can scramble or the custard may stay thin. Heat it slowly over the water bath and stop once it coats a spoon.

Swap the orange

The recipe marks orange as optional. How well each one fits the dish's main ingredients (milk, egg, sugar, vanilla, lemon):

  1. Figfits about as well
  2. Blueberryfits about as well
  3. Blackberryfits about as well
  4. Orangethe original

Fit is the average pairing score against milk, egg, sugar, vanilla, lemon. Candidates are from the same food group and used in at least 100 recipes.
