Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Form the fruit base that absorbs the spiced filling and pickling liquid.
Mustard seed
Adds sharp, pungent flavour that mellows during pickling.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.
Vinegar
Acidifies the liquid, preserving the fruit and giving it tang.
Onions
Contribute savoury depth and aroma to the filling.

The step that matters

Soak peaches in strong saltwater. Brining firms the flesh and draws out some moisture, helping the fruit hold its shape and take up the pickling liquid without turning mushy.
