What each ingredient does

Peaches
Provide the fruit flavor and make up the bulk of the preserves.
Loaf sugar
Sweetens the fruit and draws water out of it, helping the preserves keep.

The step that matters

Dry the peaches completely before packing. Sugar preserves fruit mainly by pulling water out of its cells. Any moisture left in the peaches can dilute the sugar and let syrup form, which encourages spoilage and fermentation, so the drying has to be thorough before the peaches go into the jar.
