Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Sherry wine
Adds aroma and depth of flavour to the jelly.
Lemon juice
Adds acidity that brightens the sweetness of the jelly.
Orange
Adds fresh citrus flavour and visible slices in the set jelly.

The step that matters

Dissolve the gelatine fully in the boiling water. Gelatine only sets properly when fully dissolved. Undissolved granules leave weak spots or cloudy patches, so stir until no grains remain before adding the sherry.

Flavor stand-ins for the lemon

  2. Pineappleabout as good a flavor fit
  3. Appleabout as good a flavor fit
  4. Lemonthe original

Fit is the average pairing score against sherry, wine, orange, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
