What each ingredient does

Cracked wheat
Provides the grain body that softens and thickens into the porridge as its starch gelatinizes.
Water
Hydrates the wheat kernels so they soften and release starch during the long cook.

The step that matters

Cook rapidly until the kernels stop settling. Dense wheat kernels sink and can scorch on the bottom of the pan before the mixture thickens. Keeping them suspended while the water heats helps the porridge cook evenly.
