What each ingredient does

Rolled oats
Starch that swells in hot water and thickens the porridge into a creamy texture.
Water
Hydrates the oats so they soften and gelatinize as they cook.

The step that matters

Boiling the oats rapidly until thickened. Oat starch needs sustained heat to gelatinize and thicken. Stirring as the mixture first heats helps prevent the oats from settling and scorching on the bottom of the pot.
