Why it works: Raisin and sugar are a kitchen classic. They rank in the top 13% of all ingredient pairs, and cooks put them together in 12,481 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

Fruit Yeast

Ingredients

Directions

Prepare the raisin culture

  1. Wash the raisins well and soak them in warm water for 2-3 days until fermentation occurs, indicated by bubbles on the surface.

Make the potato mixture

  1. Boil the potatoes until tender, then mash them finely or sift through a colander.

  2. Add salt and sugar to the mashed potatoes.

  3. Cool the mixture to blood temperature, then add enough raisin water to achieve the right consistency, about 2 cups.

Rise and store

  1. Let the mixture rise until light, then transfer to clean glass jars and store in a cool place.

  2. For best results, use the yeast a few days after preparation.

What each ingredient does

Raisins
Ferment in warm water, releasing the yeast activity that leavens the mixture.
Potatoes
Provide starch and body that give the yeast mixture its thick, workable consistency.
Sugar
Feeds the yeast, supporting fermentation and the rise.

The step that matters

Cool the mixture to blood temperature before adding raisin water. Yeast is killed by high heat, so the potato mixture must be cooled to a mild, blood-warm temperature before the raisin water is added. Adding it while hot can stop fermentation before the rise begins.

Swap the potato

How well each one fits the dish's main ingredients (raisin, sugar):

  1. Sweet potatofits better
  2. Arrowrootfits better
  3. Beetrootfits better
  4. Potatothe original

Fit is the average pairing score against raisin, sugar. Candidates are from the same food group and used in at least 100 recipes.
