Directions

Make the jelly

  1. Cook the sago in water in a double boiler until it becomes a thick jelly and is smooth.

  2. Add lemon juice, sugar, and enough saffron tea to achieve a lemon color.

  3. Boil for 4 to 5 minutes, then pour into molds.

Unmold and decorate

  1. Once cool, unmold onto a plate and decorate with lemon slices and blanched almonds or pine nuts.

What each ingredient does

Sago
Thickens the water into a firm, jelly-like set as it cooks and cools.
Sugar
Sweetens the jelly and balances the sharpness of the lemon juice.
Lemon juice
Adds acidity and bright lemon flavor to the jelly.

The step that matters

Cooking the sago until smooth. Sago starch must be cooked fully in the water until it thickens and turns clear and smooth; undercooked starch stays grainy and will not set into an even jelly.

Swap the almond

How well each one fits the dish's main ingredients (lemon, sugar, saffron, tea):

  1. Pistachiofits about as well
  2. Almondthe original
  3. Chickpeafits less well
  4. Chestnutfits less well

Fit is the average pairing score against lemon, sugar, saffron, tea. Candidates are from the same food group and used in at least 100 recipes.
