Why it works: Potato and corn match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 938 recipes. Both carry (e)-2-octenal, which smells fatty, green. The science ↓

Browned Potatoes

Oven, in the book's wordsA very quick oven

Ingredients

Directions

The book says “a very quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Slice cold boiled potatoes into ⅛ to ¼ inch thick pieces.

  2. Place the slices on an oiled baking sheet.

  3. Brush the potatoes with peanut cream.

  4. Sprinkle corn pepper and a little coarse sea salt on top.

  5. Bake in a very hot oven at 400°F (200°C) until browned.

  6. Serve immediately.
