What each ingredient does

Young beets
Forms the bulk of the dish and supplies its main flavor and color.
Peanut cream
Adds richness and a thick, creamy body that coats the cooked greens.

The step that matters

Press out all excess water. Water left in the cooked beets and leaves dilutes the flavor and thins the peanut cream, so the finished dish turns watery instead of thick and rich.
