Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Combine 1 cup shaved chocolate and 1 tablespoon hot water in a bowl.

  2. Place the mixture in a warm area until melted.

  3. Line a cake tin with oiled paper.

Make the batter

  1. Add the yolks of 5 eggs and beat until stiff.

  2. Mix in 1 cup granulated sugar and beat again.

  3. Stir in 1 cup walnut meal and 1 tablespoon lemon juice.

  4. Gently fold in 1 cup sifted flour.

  5. Fold in the stiffly beaten whites of 5 eggs.

Bake

  1. Pour the batter into the tin.

  2. Bake at 350°F (175°C) for 35 to 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shaved chocolate
Melts into the batter to give the cake its chocolate flavour and rich, moist crumb.
Egg yolks
Add richness and moisture and help bind the batter.
Egg whites
Whipped to hold air, giving the cake lift and a light, open texture.
Granulated sugar
Sweetens the batter and helps give the cake a tender crumb.
Walnut meal
Adds body and a nutty flavour, giving a denser, moist crumb.
Sifted flour
Provides structure that sets as the cake bakes.

The step that matters

Folding in the stiffly beaten egg whites. The whites hold the air that lifts the cake. Stirring or folding too hard knocks that air out, leaving a flat, dense cake.
