Honey Cake with Eggs

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Beat the yolks of the eggs until thick.

  2. Gradually add the honey, beating thoroughly after each addition.

  3. Add the ground caraway seed.

  4. In a separate bowl, beat the egg whites with a pinch of salt until frothy.

  5. Add the lemon juice and continue beating until white and crumbly.

  6. Fold the yolk mixture, nut meal, and flour into the egg whites.

  7. Pour the batter into ungreased bake tins immediately.

  8. Bake in a moderate oven at 350°F (175°C) until a straw or knitting needle comes out clean.

  9. Invert the cakes onto a cooling rack to allow air circulation.
