Marble Cake

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batters

  1. Mix almond meal into a snow cake batter to prepare the light part of the cake.

  2. Beat egg yolks until stiff.

  3. Add lemon juice and sugar to the yolks and beat again.

  4. Mix walnut meal, salt, ground caraway seeds, and caramel into the dark mixture for color.

Bake

  1. Drop tablespoonfuls of the light and dark mixtures alternately into cake tins until all is used.

  2. Bake in a moderate oven at 350°F (175°C) until done.

What each ingredient does

Almond meal
Adds body and a nutty, tender texture to the light batter.
Egg yolks
Enrich the batter with fat and richness, and help it set in the oven.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.
Sugar
Adds sweetness and helps the yolks blend into a smooth, stable mixture.
Walnut meal
Adds body and nutty flavor to the dark batter.
Caramel
Gives the dark batter its deep color and a browned, toasty flavor.

The step that matters

Beating the egg yolks. Yolks thicken and lighten when beaten, but they do not form stiff peaks like egg whites. Beat until thick and pale, then combine gently so the batter keeps the air it holds.

Swap the caraway
