Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Mix together the powdered sugar and sifted flour.

Whip the egg whites

  1. Beat the egg whites for 2 minutes.

  2. Add a pinch of salt and lemon juice, then beat until very stiff and crumbly.

Fold and bake

  1. Fold in the flour and sugar mixture carefully, sifting in about ¼ of it at a time.

  2. Bake as you would a snow cake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Trap air in a foam that gives the cake its light, airy structure.
Powdered sugar
Sweetens the cake and mixes in finely to keep the crumb tender.
All-purpose flour
Provides the structure that sets the cake once it is baked.
Lemon juice
Its acidity helps stabilize the whipped egg white foam.

The step that matters

Folding in the flour and sugar mixture. Folding gently and adding the mixture in small portions keeps the whipped egg white foam from deflating. Overmixing or dumping it in all at once knocks out the air that makes the cake light.
