What each ingredient does

Dates
Provide natural sweetness and body, thickening into a spread when ground and mixed with water.
Hot water
Softens and thins the ground dates into a spreadable mixture.
Zwieback
Provides a dry, crisp base that absorbs moisture from the date spread.

The step that matters

Moisten the zwieback well before spreading. Dry zwieback is crisp and porous, so it soaks up moisture unevenly. Thorough moistening lets the date mixture sit on the slice softly and keeps the base from staying dry in spots.
