Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Forms the rich, smooth body of the sauce and carries its flavour.
Flour
Thickens the cream into a smooth, coating sauce as it heats.
Oysters
Supply the main flavour and tender texture of the dish.

The step that matters

Adding the flour mixture to the boiling cream. Flour must be fully smoothed in cold milk first; if it is added in lumps it will not disperse and the sauce will turn grainy and uneven. Stirring it in while the cream is hot lets the starch swell and thicken evenly.
