Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

String beans
Main vegetable; long slow cooking softens their fibres until tender.
Baking soda
Raises the cooking water's alkalinity, helping the beans soften and keep a bright color.
Sweet cream
Adds richness and moisture, giving the cooked beans a creamy coating.
Butter
Adds fat and flavor, rounding out the finished beans.

The step that matters

Adding the baking soda. Baking soda makes the water alkaline, which speeds softening but can turn vegetables mushy and dull if overused. Add the measured half teaspoon only after the initial boil, as the record directs.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (beans, cream, walnut, butter, pepper):

  1. Nutmegthe original
  2. Sagefits about as well
  3. Tarragonfits about as well
  4. Celeryfits about as well

Fit is the average pairing score against beans, cream, walnut, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
