Directions

  1. Pare and slice the eggplant into ½ inch thick slices.

  2. Soak the slices in a strong saltwater solution for 1 hour.

  3. Remove the eggplant from the water and drain thoroughly.

Bread and fry

  2. Dip the eggplant slices into the beaten egg, then coat with cracker crumbs.

  3. Fry the slices in butter until golden brown, being careful not to fry too quickly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the tender, moist interior that contrasts with the crisp coating.
Egg
Binds the cracker crumbs to the slices so the coating stays on during frying.
Fine cracker crumbs
Form a crisp, golden coating that browns when fried.
Butter
Conducts heat for frying and adds fat, browning and a rich flavor to the coating.

The step that matters

Fry slowly over moderate heat. Frying too fast browns the crumbs before the eggplant inside is cooked through and softened. Moderate heat lets the interior cook while the coating turns golden rather than burnt.
