Chocolate Caramels

Ingredients

Directions

Make the caramel

  1. In a kettle, combine grated chocolate, brown sugar, molasses, milk, and butter.

  2. Bring the mixture to a boil, stirring constantly.

  3. Once boiling, add glycerine and continue to boil rapidly.

  4. Test the mixture by dropping a small amount into cold water; it should form a soft ball when ready.

Set and cut

  1. Pour the mixture into buttered pans and let it cool.

  2. Once cool, cut into blocks using the back of a knife.

What each ingredient does

Grated chocolate
Provides the chocolate flavor and deep color of the caramel.
Brown sugar
Adds sweetness and helps the caramel brown and soften as it cooks.
Molasses
Adds moisture, a deeper caramel flavor, and chewiness.
Milk
Supplies dairy proteins and water that give the caramel a creamy, chewy texture.
Butter
Adds fat for a smooth, tender texture and rich flavor.
Glycerine
Helps keep the caramel soft and prevents it from becoming grainy or brittle.

The step that matters

Testing the soft ball stage. Cooking too little leaves the caramel soft and sticky, while cooking too long makes it hard once cooled. The cold-water test shows when enough water has evaporated and sugar concentration is right for a chewy set.
