What each ingredient does

Calf's liver
Provides the main protein and tender texture that the dish is built around.
Sweet oil
Carries the herbs and seasonings into the liver and keeps its surface moist while roasting.
Butter
Adds richness and helps the liver brown and taste savoury when fried.
Flour (in the method)
Thickens the pan juices into a light sauce that coats the liver.
Claret wine
Adds acidity and depth to the pan sauce, balancing the richness of the liver.

The step that matters

Boil the liver for only 5 minutes before marinating. Liver turns grainy and tough when overcooked, because its proteins tighten with prolonged heat. A short blanch firms the surface so it can be handled, while leaving the inside tender for the later cooking.

Swap the onion

How well each one fits the dish's main ingredients (liver, thyme, parsley, pepper, butter, wine, allspice):

  1. Shallotfits better
  2. Carrotfits better
  3. Parsnipfits better
  4. Onionthe original

Fit is the average pairing score against liver, thyme, parsley, pepper, butter, wine, allspice. Candidates are from the same food group and used in at least 100 recipes.
