What each ingredient does

Calf's head
Provides the main body and gelatin that gives the soup its rich, full texture.
Veal
Adds meaty flavor and body to the soup.
Potatoes
Soften in the broth and thicken it slightly with their starch.
Browned flour
Adds toasty, nutty color and flavor and helps thicken the soup.
Butter
Adds richness and fat, carrying flavor and smoothing the texture.
Hard-boiled eggs
Add richness and a soft, creamy texture to the soup.

The step that matters

Simmer until all ingredients are cooked through. Gentle simmering lets the calf's head and veal become tender and release gelatin without toughening the meat. A hard boil can make the proteins seize and cloud the broth.

Swap the potato

How well each one fits the dish's main ingredients (veal, pepper, lemon, flour, butter, egg, cinnamon):

  1. Shallotfits better
  2. Arrowrootfits better
  3. Spinachfits better
  4. Potatothe original

Fit is the average pairing score against veal, pepper, lemon, flour, butter, egg, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
