What each ingredient does

Oysters
Are the main ingredient, cooked gently so their edges curl and they firm slightly.
Vinegar
Provides the sharp acidity that preserves the oysters and gives the pickle its tang.
Allspice
Adds warm, aromatic spice flavour to the pickling liquid.
Lemons
Add bright acidity and citrus aroma to the pickling liquid.

The step that matters

Pouring the hot mixture over the hot oysters. The oysters must be fully hot when the liquid is poured over them, and then kept cold, so the pickle is absorbed evenly and stays safe to hold. Pouring too early or letting the oysters cool before storing can leave them underflavoured or poorly preserved.

Swap the mace

How well each one fits the dish's main ingredients (oyster, allspice, pepper, vinegar, lemon):

  1. Marjoramfits better
  2. Thymefits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against oyster, allspice, pepper, vinegar, lemon. Candidates are from the same food group and used in at least 100 recipes.
