Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the liver

  1. Soak calf's liver in cold water for 1 hour.

  2. Drain the liver for a few minutes.

  3. Dip the liver in flour seasoned with salt and pepper.

Bake

  1. In a skillet, lay 8 to 10 pieces of liver.

  2. Add large pieces of lard and butter, and optionally, a whole onion.

  3. Cover with boiling water.

  4. Bake in a hot oven at 400°F (200°C) for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Is the main protein that becomes tender and firm as it cooks through.
Flour
Forms a light coating that helps the liver brown on its surface.
Lard
Adds fat that carries heat and gives the liver a rich, savory flavor.
Butter
Adds fat and dairy flavor that enriches the browning and taste of the liver.

The step that matters

Covering with boiling water. Pouring boiling water over the liver starts cooking it right away and helps keep the pieces moist in the hot oven, so they do not dry out before the time is up.

Swap the onion

How well each one fits the dish's main ingredients (liver, flour, pepper, butter):

  1. Shallotfits better
  2. Chivefits about as well
  3. Capsicumfits about as well
  4. Onionthe original

Fit is the average pairing score against liver, flour, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
