Escalloped Potatoes

Oven, in the book's wordsA fairly hot oven

Ingredients

Directions

The book says “a fairly hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Peel and slice the potatoes.

  2. Place 4 small lumps of butter in the bottom of a baking dish.

  3. Add a layer of potatoes on top of the butter.

  4. Add small pieces of butter, then season with salt and pepper.

  5. Repeat layering with potatoes, butter, salt, and pepper until the dish is nearly full.

  6. Pour in enough milk to not cover the potatoes.

  7. Bake in a 400°F (200°C) oven for 45 minutes to 1 hour.

  8. When browned, cover with greased paper or a pie pan.
