Cream Sponge

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the sponge

  1. Separate the eggs, placing the whites aside to cool.

  2. Grate the lemon, reserving 1 tablespoon for the dough and the rest for the topping.

  3. Beat the yolks until light.

  4. Add sugar, flour, and lemon zest to the yolks; mix well.

  5. Beat the egg whites until stiff.

  6. Gently fold the stiff egg whites into the yolk mixture.

  7. Preheat the oven to 400°F (200°C) and bake the mixture in 3 pans.

Make the filling

  1. Bring the milk to a boil for the filling.

  2. In a bowl, mix 1½ tablespoons sugar, cornstarch, and 1 egg.

  3. Dampen the mixture with a little milk.

  4. Stir the mixture into the boiling milk and cook until thickened.

Assemble and finish

  1. Spread the filling on the two lower layers of sponge cake.

  2. Sweeten the remaining lemon zest.

  3. Place the sweetened zest on the top layer of the sponge cake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trapped by beating create the airy structure that lifts the sponge.
All-purpose flour
Provides the starch and protein that set the sponge's crumb structure.
Cornstarch
Thickens the milk mixture into a smooth, sliceable custard filling.
Milk
Forms the liquid base of the filling, which thickens when boiled with starch.
Lemon
Its zest adds fragrant citrus aroma to both the sponge and the topping.

The step that matters

Stir the mixture into the boiling milk and cook until thickened. Cornstarch must be cooked while stirring to gelatinize fully; adding it to milk without constant stirring can cause lumps, and undercooking leaves a starchy taste and a thin filling.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, flour, milk):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Lemonthe original

Fit is the average pairing score against egg, sugar, flour, milk. Candidates are from the same food group and used in at least 100 recipes.
