Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Melon
Becomes the translucent, tender body of the preserve as it cooks in syrup.
White sugar
Sweetens the preserve and, at high concentration, helps it turn clear and keep well.
Lemon juice
Adds acidity that brightens the flavor and helps balance the sweetness.
Green ginger
Infuses the water with a warm, pungent aroma that flavors the syrup.

The step that matters

Boil the melon until clear. Stop too early and the pieces stay opaque and firm; cook too long and they break down. Watching for clarity signals that the sugar and fruit have become translucent.

Swap the lemon

How well each one fits the dish's main ingredients (melon, sugar, ginger, peach):

  1. Pearfits better
  2. Apricotfits better
  3. Vanillafits better
  4. Lemonthe original

Fit is the average pairing score against melon, sugar, ginger, peach. Candidates are from the same food group and used in at least 100 recipes.
