What each ingredient does

Clams
Provide the main seafood flavor and body of the chowder.
Potatoes
Soften and thicken the broth while adding bulk to the chowder.
Soda crackers
Soak up liquid and help thicken the chowder base.
Milk
Adds creaminess and mellows the seafood flavor.
Butter
Adds richness and a silky mouthfeel to the crackers.

The step that matters

Boil the milk and pour it over the crackers. Milk scalds easily and can curdle or form a skin if boiled hard for long, so heat it only until steaming and pour it on promptly.

Swap the onion

How well each one fits the dish's main ingredients (clam, potato, butter, milk, pepper):

  1. Capsicumfits better
  2. Onionthe original
  3. Asparagusfits about as well
